What Makes Sichuan Cuisine Distinct?

Sichuan cooking is centered around málà (麻辣), a spicy flavor profile that combines dried chilies with the tingling numbness of peppercorns. But great Sichuan isn't defined by heat alone, it’s also about xiāng (香): the rich aroma released when fresh seasonings are cooked over high heat until perfectly fragrant. 

We spent countless hours in our kitchens to perfect a recipe that delivers the right balance of málà (麻辣) and xiāng (香), the essential quality of any great Sichuan dish.

Story

Growing up in Arizona, many of our fondest childhood memories took place in our favorite Sichuan restaurants with family and friends. The one dish we would order again and again was là zǐ jī. MáLà Foods is our way of sharing that tradition: an authentic, thoughtfully crafted meal made to deliver the true Sichuan experience: unapologetically málà and xiāng.
